Baked Barbecue Tofu Sandwich

 

A savory tofu baked in barbecue sauce and smothered in onions, served on a French roll and topped with lettuce. A hearty hoagie! Perfect for a picnic or just hanging out on the patio with the neighbors.

 

Preparation time: 15 minutes
Baking time: 45 Minutes
Makes 6 sandwiches

 

Ingredients:

2 blocks of extra firm tofu
1 28oz bottle of barbecue sauce (your choice)
¼ cup of creamy peanut butter
¼ cup of water
1 medium size onion thinly sliced
6 French bread rolls
Iceberg lettuce thinly shredded

 

Preparation:

Preheat oven to 400 degrees
Add the barbecue sauce, peanut butter and water to a blender and mix well.
Thinly slice the tofu and layer it in a 9” baking pan, spread the barbecue sauce across each layer and repeat process.
Add the sliced onions to the top layer, cover the baking pan with a lid or aluminum foil
Bake at 400 degrees for 45 minutes.
Slice open a French roll and fill with the baked tofu and onions.
Top with shredded lettuce and serve with your favorite chips and beverage.

 

Cook’s Note:

Corn on the cob, baked beans, and coleslaw or potato salad would be great side dishes to round out this Summer Meal.
