Black Eyed Peas and Collard Greens Pesto
Collard Green Pesto
Eating “greens” on New Year’s Day is said to bring luck and prosperity throughout the coming year. Get your “greens” this year with the Veggie Kitchen’s Collard Green Pesto!

Preparation:
1 bunch of collard greens (2 full cups)
1/3 cup walnuts
2 minced cloves of garlic
1/3 cup olive oil
1/3 cup parmesan cheese
1 tsp dried basil
1/4 tsp black pepper
1/2 tsp salt (adjust to taste)
Preparation:
Place a vegetable steamer in a pot and add enough water to touch the bottom of the steamer. Bring water to a boil.
Wash collard greens and remove leaves from thick center stems. Roll leaves and chop into bits.
When water is at a rolling boil place the greens in the pot and steam for 4 minutes.
Drain the greens and set aside.
Toast walnuts in a skillet until lightly browned (7-8 minutes on medium high heat).
Place walnuts, dried basil, and garlic in a food processor and pulse to chop the walnuts.
Add the greens, parmesan cheese, olive oil, salt and pepper and pulse until well mixed.
Chill until ready to serve.
