Mince your green onions and garlic. Coat the bottom of your baking dish with olive oil. Add veggie broth, Herbs de Provence, green onion, and your garlic. The herbs help to continue the flavor throughout the dish that you have used in the breading of the tofu. Balsamic vinegar is added to help bring out all of the flavors so that you do not have to use as much salt. Dust with pepper to season the entire mixture and you are ready for the next step.
The tofu will be sliced in eight pieces like a filet and then you will place them on top of the veggie broth mixture. Put about two tablespoons of breading mixture on top of each filet. Cover your baking pan with foil and place in a preheated oven for 15 minutes. The foil allows it to get hotter inside of the pan without overcooking and drying out the bread crumbs. After 15 minutes, take the foil off and allow it to cook for 10 more minutes. This allows the bread crumbs to crunch up to add texture and bite to your tofu.
