Cashew and Macadamia Nut Butter Cookies
Cashew and Macadamia Butter Cookies
Preparation and cooking time: Under 30 minutes
Makes about 3 dozen cookies
Ingredients:
½ cup butter or non-hydrogenated margarine
½ cup cashew macadamia butter
¾ cup brown sugar
1½ tbsp cream
¼ cup unsweetened applesauce
1 tsp vanilla extract
½ cup dry roasted, unsalted cashews chopped into small pieces
½ cup oat flour (grind for < 1 min ½ cup of quick Oats in a small grinder – coffee grinder works well)
1¼ cup whole wheat flour
1 tsp baking soda
Preparation
Preheat oven to 350°
Cream butter or margarine and cashew macadamia butter in a large bowl.
Add brown sugar and mix well.
Add cream, applesauce, and vanilla extract. Mix well.
Add cashews and mix.
In a separate bowl, mix oat flour, wheat flour, and baking soda.
Add flour mixture to 1st bowl of ingredients. Mix well.
Roll a tbsp of the dough into balls, flatten, and place 1” apart onto an ungreased baking tray.
Cook for 8 - 9 minutes.
Note: You may substitute:
peanut butter for the cashew macadamia butter
1¾ cups all whole wheat flour for the oat flour / wheat flour mixture
non-dairy milk for the cream
