Eggless Vegan Banana Date Bread

 

This excellent banana date bread owes its light and moist texture to the flax seed and water mixture. The Sucanat adds a rich color and caramel like flavor. Use a very ripe banana, one with spots on it. They are more flavorful and mash easily.

 

Preparation time: 20 minutes
Baking pan size: 8 ½ inch by 4 ½ inch loaf pan
Baking time: 30 minutes
Preheat the oven to 350 degrees

 

Ingredients:

1 tbs of ground flax seeds
1/8 cup of water
1 ripe banana
¼ cup of vegetable oil
¼ cup of almond milk
½ tsp of vanilla extract
½ cup of dates pitted and chopped
¾ cup whole wheat flour
¼ tsp of baking powder
¼ tsp of baking soda
¼ tsp of cinnamon
3/8 cup of Sucanat

 

Preparation:

Grind flax seeds in coffee grinder, place in a bowl and mix well with 1/8 cup of water
Peel and thoroughly mash banana and stir into the flax seed mixture.
Mix the oil, almond milk and vanilla into the flax seed mixture.
Add chopped dates and mix again.
In a separate container mix all the dry ingredients together.
Add the dry ingredients to the flax mixture and stir well.
Place mixture in loaf pan lined with parchment paper and bake at 350 degrees for 30 minutes or until done.
Serve with Veggie Kitchen Chai Masala!

 

Cooks Note:
You could buy ground flax seed if you don’t want to grind your own and you can substitute raw or organic sugar if Sucanat is not available. Use a very ripe banana, one with spots on it. They are more flavorful and mash easily.
