Hummus and Roasted Red Pepper
Here are two simple and satisfying recipes for making the Middle Eastern dip known as Hummus.
Preparation time: 15 minutes
Ingredients: Hummus
1 15 oz can of garbanzo beans
1/3 cup of tahini (sesame butter)
½ tsp of cumin powder
½ tsp of paprika
½ tsp of sea salt
¼ cup of lemon juice (approximately 1 lemon)
2 cloves of garlic (crushed)
Roasted Red Pepper with Cilantro Hummus
To make this delicious hummus just add ½ cup of roasted red pepper and a ¼ cup of diced cilantro leaves to the traditional hummus recipe. Drain or pat dry the roasted red pepper.
Preparation:
Place all the ingredients into a food processor and pulse until you have a smooth creamy texture. That’s it!
Cook’s Note:
Serve fresh at room temperature. It goes great with pita bread, crackers or chips and is really good with falafel. Any leftovers can be stored in an airtight container in the refrigerator for another time. You can add a bit of olive oil to the top of the hummus to keep it moist and fresh. These recipes can be adjusted to suit your own taste.
