The Nutty, Fruity Oatmeal and Chocolate Cookie
Here is a cookie with a delicious mix of whole grain goodness, rich chocolate and the sweet tart flavor of dried cherries. Easy to make and fun to eat.
Preparation time: 15 minutes
Baking time: 11 minutes
Makes about 2 dozen cookies
Ingredients:
1 cup white whole wheat flour (or regular whole wheat flour)
1 cup rolled oats
1 cup dark brown sugar
3 tbs plain yoghurt
1 tsp vanilla extract
½ tsp baking soda
¾ tsp baking powder
1 stick of softened butter
4 oz of dried cherries
4 oz of bittersweet chocolate (finely chopped)
4 oz of toasted pecans or walnuts
Preparation:
Preheat oven to 350 degrees.
Combine butter and sugar in a bowl and mix until creamy (1-2 minutes).
Add the yoghurt and vanilla and mix until well blended. (30 seconds).
Add the dry ingredients, chocolate, cherries and mix until well blended.
Take a heaping tbs of batter and form it into a cookie shape.
Place cookies on a baking sheet keeping them about 2” apart.
Bake for 11 minutes at 350 degrees. The cookies should rise up nicely and be lightly browned on the edges and partially browned on top.
Remove from oven and let cookies cool a few minutes before removing them from the baking sheet. (the cookies can break if you move them when they are too hot)
Once the cookies are cool they can be stored in an airtight container.
