Pumpkin Cranberry Cookies

 

A wonderful cookie with cake-like texture and a taste of the holidays in every bite!

 

Preparation time: 20 minutes
Baking time: 12 minutes
1 batch makes approximately 30 cookies

 

Ingredients:

1 ½ cups white whole wheat flour
½ cup quick oats
¾ cup brown sugar
½ cup canned pumpkin
4 tbs plain yoghurt
2 tsp vanilla extract
1 stick softened butter or margarine
½ cup dried cranberries
½ cup white chocolate chips
1 tsp baking powder
½ tsp baking soda
1 tsp cinnamon
¼ tsp nutmeg
¼ tsp allspice

 

Preparation:

Preheat oven to 350°.
Place flour oats and brown sugar in a mixing bowl.
Stir in baking powder and baking soda.
Add pumpkin, yoghurt, vanilla, butter, cranberries, white chips, and spices.
Mix well.
Shape tablespoons of dough into cookies and place 1 inch apart on baking tray.
Bake at 350° for 12 minutes.
