Veggie Kitchen Summer Rolls

 

A light and refreshing combination of fresh herbs and veggies topped with a delicious peanut sauce.
A perfect Summer Meal!

 

Servings: 10 summer rolls

 

Ingredients:
1 package of seasoned pressed tofu
1 package of dried mung bean noodles or rice noodles
1 package of dried, round rice wrappers for spring rolls
For the filling you can use any fresh vegetables you like.
We have just listed some of the most commonly used veggies. Fresh basil can also be used along with the cilantro.
2 grated carrots
2 Persian cucumbers, sliced thinly length wise
1 bunch fresh mint and basil
1 bunch cilantro
2 green onions diced
1 bag mung bean sprouts
1 head red leaf lettuce

 

  • Slice pressed tofu into thin strips.
  • Wash lettuce, mint, cilantro and sprouts. Drain and pat dry.
  • Tear lettuce into bite sized pieces and pick mint and cilantro from stems. Place in separate bowls
  • Peel and cut cucumber and place in bowl
  • Peel and grate carrots and place in bowl
  • Dice the green onion and mix with the mint and cilantro
  • Place bowls in a line ready for assembling the summer rolls.

 

Fill a shallow, large bowl with hot water and a squeeze of lemon juice. Submerge a rice wrapper for approximately 30 seconds in the water, then put it on a plate. Place the filling in the wrapper. Take the edge of the wrapper closest to you and fold it over the top of the filling, fold the sides of the wrapper over the filling and gently roll the wrapper tightly. The wrapper will stick to the plate and you use this tension to get the wrapper to wrap tightly. You can use two wrappers at a time, so they won’t tear, until you are comfortable wrapping the summer rolls.

 

Cooks Note: If you are making the summer rolls ahead of time, place them in a Tupperware container lined with wax paper. This will keep them from sticking together. Then cover with a damp dish towel to keep them from drying out.

 

Peanut and Coconut Dipping Sauce

 

Ingredients:
¾ cup of peanut butter
1 ¼ cups of coconut milk
2 tbs of white or yellow miso paste
2 tsp of soy sauce
1 tbs of curry powder
2 tsp of chili powder
1 tbs of organic or raw sugar

 

Mix ingredients in blender and store in glass container. Spices can be adjusted to suit your own taste.
