Tofu Breakfast Scramble and Western Scramble
Preparation and cooking time: 15 minutes
Breakfast Scramble Ingredients:
1 oz butter
¼ tsp tumeric
¼ tsp Trader Joe’s 21 Seasoning Mix (salt free) or equivalent (Vegit or Mrs. Dash will work fine)
Tofu block (approx. 16oz)
2 oz of cream cheese
Salt and Pepper to taste
Western Scramble Ingredients (add to Breakfast Scramble):
2 diced green onions
½ a bell pepper diced
2 or 3 slices of Yves Deli Ham diced. This is a vegan product that is available in most large supermarkets and natural food stores.
Breakfast Scramble Preparation:
- Heat butter in frying pan over medium heat.
- When butter melts, mix in tumeric and 21 seasoning mix.
- Add whole block of tofu.
- Use a potato masher to mash tofu into small pieces.
- Use a spatula to turn and mix tofu until it is mixed with, and covered by the seasoning. The tumeric will turn the tofu to a scrambled-egg like yellow color.
- Continue cooking for a few minutes to evaporate some of the water in the tofu until it has a scrambled-egg like consistency.
- Add cream cheese, and mix well.
- Add salt and pepper to taste.

- Add green onion, bell pepper, and veggie ham.
- Heat and stir until ingredients begin to brown
- Add whole block of tofu.
- Use a potato masher to mash tofu into small pieces.
- Use a spatula to turn and mix tofu until it is mixed with, and covered by the seasoning. The tumeric will turn the tofu to a scrambled-egg like yellow color.
- Continue cooking for a few minutes to evaporate some of the water in the tofu until it has a scrambled-egg like consistency.
- Add cream cheese, and mix well.
- Add salt and pepper to taste.

Tofu Western Scramble - a new family comfort food.
Using tofu and a vegan ham substitute in place of eggs and ham, like in the Tofu Western Scramble, will allow you to have the same texture and taste as scrambled eggs and ham but without all the cholesterol. Tofu Western Scramble is an easy and quick dish to make and when you try it you will experience that it tastes great too.
Tofu is a great way to replace proteins. It has been around for over 2000 years and was first made in China. It is widely available at your local store for maximum convenience. Tofu comes in different textures and the texture that you choose will depend upon the recipe that you are using it in. For this recipe firm tofu will work best. Now you are ready to begin cooking Tofu Western Scramble.
Do your prep work before you begin. You will want to start by dicing up the bell pepper, onion, and the vegan ham. Put about an ounce of butter in your pan and turn on the heat to medium high. You want the butter to melt and cover the bottom of the pan. Add your spices to the butter and allow them to toast for about a minute to bring out the flavor. Turmeric will offer a nice golden color to the tofu and the seasoning mix will add additional flavor to the tofu and the veggies.
Now you are ready to add the bell pepper, onion, and veggie ham. You will want to allow this to cook for a minute or two to allow the bell pepper to soften and cook a little before adding the tofu. Add the tofu block and mash it down until it comes apart. You want the texture to resemble scrambled eggs, so continue breaking it up to this point. Add salt and pepper to taste and combine the mixture with two ounces of cream cheese. The cream cheese adds a nice smooth texture to the scramble.
Cook for another minute or two. Putting a lid on the pan will help it to cook faster, but if you see that it is still a little wet, you will want to take the lid off, as this will help to cook off the water. Now it is ready to serve.
If you are a vegan or want a cholesterol free recipe, there are a few substitutions that you can make. Use margarine instead of butter, and substitute the cream cheese with a mild nut butter, like tahini or cashew butter or a vegan cream cheese product. This will add the same smoothness that cream cheese does.
You can easily make this a complete meal with the addition of some fruit or juice, along with a bagel, toast, or English muffin.
