Very Vegan Cupcakes
A healthy and delicious cupcake with a light moist texture and a hint of vanilla. The cupcakes are full of flavor and are cholesterol and salt free. A vegan delight that everyone will enjoy
Preparation time: 12 minutes
Baking time: 18 to 20 minutes
Makes 1 dozen cupcakes
Ingredients:
1 ½ cups of whole wheat flour
1 cup of organic or raw sugar
1½ tsp of baking powder
½ cup of safflower oil
1 tbs of vanilla
1 tsp of apple cider vinegar
1 cup of water
Preparation:
Preheat oven to 350 degrees.
Mix together the flour, sugar and baking powder,
Add onto the dry ingredients the oil, vanilla and apple cider vinegar
Add the water and slowly stir and mix well.
Pour batter into a paper lined cupcake tray, filling each to just above the half way mark and place in the oven.
Test for doneness by inserting a tooth pick after 18 to 20 minutes. If tooth pick comes out clean they are ready.
Frost with your favorite icing when cool.
Cooks Note:
The cupcakes will be a little crunchy on top but get softer as they cool.
