Veggie Bean Medley

 

Ingredients:

15 Ounce Can of Pinto Beans
15 Ounce Can of Corn
15 Ounce Can of Diced Tomato's
2 Clove Garlic
1⁄2 Unit Small Red Onion
1⁄4 Cup Cilantro
1 Unit Celery Stalk
1 Unit Medium Zucchini
1 Unit Small Red Bell Pepper
2 Tablespoon (Metric) olive oil
1⁄2 Teaspoon (Metric) cumin seeds
1 Teaspoon (Metric) chili powder
1⁄2 Teaspoon (Metric) oregano

 

Preparation:

Peel and crush garlic.
Dice onion, celery, bell pepper, and zucchini.
Wash cilantro, remove leaves from stems and dice leaves.
Heat olive oil in frying pan over medium high heat.
Mix cumin, chili powder, and oregano into olive oil.
Add crushed garlic and diced veggies into frying pan and sauté for approximately 5 minutes.
Rinse and drain beans and corn, add to frying pan, and stir.
Add diced tomatoes.
Add salt to taste.
Stir, cover, and reduce heat.
Simmer for 10 minutes
