Veggie Kitchen Cornbread Recipe

Cornbread

 

Preparation time: 15 minutes
Baking time: 25 minutes
Makes 9 servings

 

Ingredients:

1 cup yellow corn meal
1 cup white whole wheat flour (or regular whole wheat flour)
1/4 cup organic raw sugar (regular sugar can be used)
2 tbs plain yoghurt
1 cup 2% milk
1/3 cup vegetable oil
1 tbs “aluminum free” baking powder

 

Preparation:

Preheat oven to 350 degrees.
Combine corn meal, flour, sugar, and baking powder in a bowl.
Combine milk, oil, and yoghurt in a bowl and mix well.
Add the wet mixture to the flour mixture and stir until well blended.
Grease an 8” square baking pan and line the pan with a piece of parchment paper.
Pour batter into pan.
Bake for 20 to 25 minutes at 350 degrees or until a wooden toothpick inserted in the center comes out clean.
Remove from oven and take out of the baking pan.
Baste top of corn bread with margarine or butter.
Serve warm.

 

Tastes great served with a bowl of chili or soup!!
