Veggie Marinara Sauce and Tofu Tots
Veggie Marinara Sauce
This marinara sauce is full of flavor and veggies. It is easy to make and is a great sauce over pasta or in lasagna.
Preparation and cooking time: 1 hour
Ingredients:
1 28 oz can of crushed tomatoes
1 28 oz can of petite diced tomatoes
1 tbs of crushed garlic (3-4 cloves)
1 small onion diced (1 cup)
1 celery stalk diced
1 small green bell pepper diced (1 cup)
1 cup of sliced white button mushrooms (6 small mushrooms)
1 cup of diced zucchini
1 tbs of Italian Seasoning
½ tsp of oregano
1/8 tsp of crushed red chili flakes
½ tsp of each of the following: raw sugar, salt and pepper
1 tsp of Balsamic vinegar
1 tbs of soy sauce
2 tbs of olive oil
Procedure:
1. Heat the olive oil in a large pot
2. Add the crushed garlic, onion, celery and bell pepper and sauté until browned (about 7 minutes)
3. Add the herbs, chili flakes, zucchini and mushrooms and continue to sauté for 10 minutes
4. Add the crushed and diced tomatoes, sugar, salt and pepper, vinegar, soy sauce and mix well.
5. Once the sauce boils bring down the heat and let the sauce simmer for about 30 minutes, stirring occasionally.
Serve over your favorite pasta with Tofu Tots.
Tofu Tots
Preparation: 20 minutes
Serving size: Approximately 20
Preheat oven to 350 degrees
Ingredients:
14 ounce pack of tofu, well drained
1 cup of shredded zucchini
1 tablespoon of minced garlic
1 tablespoon of Italian seasoning
1 teaspoon of soy sauce (can use reduced sodium)
½ teaspoon of salt
Procedure
1. Mix all ingredients together
2. Shape seasoned tofu into balls of one inch in diameter and place on a greased baking tray
3. Bake for 30 to 40 minutes until lightly browned
Serve with spaghetti and marinara sauce.
