Veggie Sandwich Spread
Here is a quick, tasty and economical recipe that is perfect for a brown bag lunch or a picnic.
Preparation Time: 15 minutes
Ingredients:
15oz can of Garbanzo Beans, rinsed and drained
¼ cup of eggless / fat free mayonnaise
1 tsp Dijon mustard
2 tbs sweet pickle relish
1 Celery rib diced
½ tsp of dill
½ tsp of Spike Seasoning
¼ tsp of celery salt or to taste.
Preparation:
Place Garbanzo Beans in a bowl and mash with a potato masher.
Add mayonnaise, mustard, and pickle relish.
Add diced celery, dill, Spike Seasoning, and celery salt.
Mix well.
Spread on your favorite bread and top with tomato slice and lettuce, or serve as a dip with crackers or chips.
Chill to enhance flavor.
Makes 4 to 6 sandwiches.
