Very Vegan Bran Muffin

 

The blend of oat and wheat bran, wheat germ and raisins, make this fiber-rich muffin delicious and satisfying with a soft, moist texture and the mellow taste of molasses!

 

Preparation time: 15 minutes
Baking time: 18-20 minutes
Makes 1 dozen muffins

 

Ingredients:

1 1/2 cups whole wheat flour
3/4 cup brown sugar
1/2 cup safflower oil
1/4 cup wheat germ
1/4 cup oat bran
1/4 wheat bran
2 tsp baking powder
1 cup water
2 tbs molasses
1 tsp vanilla
1 1/2 tsp apple cider vinegar
1/2 cup raisins

 

Preparation:

Preheat oven to 350°.
Mix flour, brown sugar, wheat germ, oat bran, wheat bran, baking powder, and raisins together in a large bowl.
Mix water, molasses, and vanilla together.
Add safflower oil, apple cider vinegar, and water mixture to the dry ingredients.
Mix slowly until a thick batter forms.
Pour batter slowly into paper-lined cupcake tray. Fill each holder just above half-way.
Bake at 350° for 17 minutes, and insert a toothpick to test.
Muffins are ready when a toothpick can be inserted and removed and it comes out clean.
